Mammy's Pecan Pie

Prep: 20 min | 🍳 Cook: 45 mins. -1 hour | 🔥 Oven: 400°F then reduce to 350°F

Gathering Your Ingredients

  • 2 cups white Karo syrup-this equals 1 bottle of Karo Syrup
  • 6 eggs, beaten separately
  • 1 cup brown sugar
  • ½ cup butter, melted
  • 2 tsp vanilla
  • ⅛ tsp salt
  • 2½ cups chopped pecans
  • ½ tsp maple flavoring-3 drops

The Baking Process

Beat together eggs, sugars, syrup, salt, vanilla, and melted butter by hand. Fold in chopped pecans and maple flavoring. Pour into pie shells and bake at 400°F for 15 minutes, then reduce to 350°F for 35-40 minutes until set.

Mammy's Tip: Sometimes you need to add more pecans according to how it looks. This recipe makes enough for 2 regular pies or 1 deep dish. Mammy usually makes 1 double recipe and half a recipe for 3 pies at Thanksgiving. Do NOT put in pie shell until ready to cook.

Memories with Mammy

I have watched and helped Mammy make this pie for over 20 years. Over the years I have tried to write down all her little things she adds to it. My favorite memory is watching Mammy measure butter one Thanksgiving. When I showed her, the measurements printed on the wrapper, she couldn't stop laughing - in all her years of cooking, she'd never noticed them! It's these sweet moments that make this recipe so special.
